My
"still in my 20's bucket list" is all about new experiences while I am still young. ('Cus 29 is and 30 is no longer?) I have found that as I get older there are fewer and fewer things that are totally new. While change freaks me out in a lot of ways, and I don't do well in new situations, I still miss that thrill that comes with a new discovery, and the little tingle in my brain as new synapse are formed. So maybe I am being a bit dramatic. Being a part of a generation that was brought up in the information age, and having so much at our fingertips at all times, a little old-school/first-hand discovery, and taking the time to appreciate "newness," has been fun.
Ok, so on to my latest little adventure, and list number 11.
Jason's friend from work, who is Guatemalan, invited us over for dinner. They fixed us enchiladas. Now Guatemalan enchiladas are very different from Mexican enchiladas.

As you can see in the pictures they are unique. You start with a corn tostada then put on a mix of ground beef with carrot, onion, and potato. Next goes the cooked cabbage, beets, seasoned with vinegar and salt. Then you top the whole thing with hard boiled eggs. It is hardy, healthy and tasts good. It is, however, very messy and hard to eat. So not only did I get to try a new and authentic food, they taught me how to make it. The picture is from dinner tonight.

It certainly wouldn't be a choice for me, but your picture makes it look almost edible. I thought you were going to say that "not only did you get to try authentic food, you got to try a new kind of stain remover to get the beet juice out." : ) Mom
Awesome! Kurt and I have a fondness for Guatemalan food since our trip there before Nat was born. Our home had a native maid and her specialty was the salsa verde: made from scratch. They served it with e-v-e-r-y-t-h-i-n-g, even the eggs at breakfast. Needless to say, I came back a little rounder from that trip.
